COFFEE CRUSTED PRIME RIB:

  1. Allow the beef to come to room temperature for 1 hour. Preheat the oven to 450 degrees.
  2. Rub spice mixture over the beef and let rest. When oven is ready, roast beef for 15 minutes. Reduce heat to 325 degrees and roast the beef for 15 minutes per pound or to the desired degree of doneness: 120 degrees for rare, 130 degrees for medium and 140 degrees for well done.
  3. Once the internal temperature reaches the desired degree, remove the beef and allow it to sit for 20 minutes.
  4. The roast will continue to cook and the temperature will rise during this time.

  2. Bring mixture to a boil, reduce heat and continue to cook until reduced by half.
