Beef Tenderloin Oven Recipe

Ingredients

  • 1 5 lb beef tenderloin, trimmed
  • 1 1/2 tablespoons olive oil
  • 4 teaspoons of salt
  • 2 teaspoons of pepper

Gorgonzola Sauce:

  • 1 1/2 cups half and half
  • 3 oz crumbled gorgonzola cheese
  • salt and pepper to taste

  1. Allow the beef tenderloin to stand at room temperature for 1 hour.
  2. Preheat the oven to 450 degrees.
  3. Rub olive oil over the beef tenderloin. Season with salt and pepper.
  4. Place beef on the baking sheet, cover with foil and bake for 40-45 minutes or until the internal temperature reaches 145 degrees for medium rare.
  5. Allow the beef to stand for 15 minutes before slicing.
  6. To prepare the sauce, bring heavy cream to a boil in a saucepan over medium heat.
  7. Reduce heat, stir in the cheese and stir until sauce has thickened. Season with salt and pepper to taste.
