ingredients
12 small flour tortillas
1lb lean ground beef
Taco seasoning mix
14 oz can fire-roasted tomatoes
14 oz can pinto beans, rinsed and drained
¼ diced yellow peppers
1 cup cheddar cheese, shredded
Lettuce, tomatoes, and avocados for topping

Preheat the oven to 400 degrees. Spray a 9 x 9-inch baking dish and set aside.
Place a large skillet over medium heat, add ground beef. Brown and crumble the beef; add taco seasoning. Stir in tomatoes, beans, and peppers. Stir until the mixture has thickened, adding water if the mixture is too thick.
Place 3 tortillas on the bottom of the baking dish, halving tortillas if necessary. Place a third of the meat mixture over the tortillas. Sprinkle 1 quarter of the cheese over the meat mixture.
Repeat layers with the remaining tortillas, beef, and cheese, ending with tortillas,
Bake the casserole for about 8 minutes or until cheese has melted.
Remove the casserole and top with lettuce, tomatoes, chopped avocado, and extra cheese.
