Beef lasagna Skillet

Skillet Beef Lasagna is a hearty, protein packed Italian meal you can make in one skillet meaning less clean-up. This is a back-to-school favorite the whole family will love. Pair this with a light salad and some crusty bread to soak up all the juices!

ingredients

  • 1 pound of ground beef, browned and drained  
  • 3 Tablespoons olive oil, divided 
  • 1/4 cup of onion, diced  
  • 4 garlic cloves, minced  
  • 2 - 15 ounce cans of tomato sauce  
  • 1 - 15 ounce can of diced tomatoes 
  • 8 ounces {about 10} uncooked lasagna noodles, broken 
  • 1 cup of cottage cheese 
  • 1 cup of mozzarella cheese, shredded  
  • 1 cup of ricotta cheese 
  • Fresh parsley and basil

  1. In a large skillet heat 2 Tablespoons olive oil over medium high heat. Add the ground beef and saute until browned and then drain the beef. Add 1 Tablespoons of olive oil and saute the garlic and onion for 2 minutes. Add back in the ground beef. 
  2. Pour in the sauce, diced tomatoes, cottage cheese and add the broken noodles. Make sure the noodles are under the sauce completely so they can cook evenly. Cover and simmer for 20-25 minutes, or until the noodles are completely cooked. Sometimes the sauce cooks down too quickly and you may want to add a small amount of water half way through cooking. 
  3. Add dollops of the ricotta cheese around the skillet and top with mozzarella cheese and the fresh herbs. 
  4. Serve warm!
