Greek beef meatball rice bowls

These easy Greek Meatballs are so flavorful and the perfect addition to rice or hummus bowls or eaten on their own. Your favorite Greek flavors come together to create a meatball your family will go crazy for!

ingredients

  • 1/2 of a small red onion, finely chopped 
  • 4 garlic cloves, minced 
  • 1 1/2 pounds ground beef
  • 1 cup normal breadcrumbs 
  • 1 egg 
  • 1/4 cup fresh parsley, finely chopped 
  • 5 large mint leaves, finely chopped 
  • 1 teaspoon dried oregano 
  • 1/2 teaspoon basil 
  • 2 Tablespoons extra virgin olive oil 
  • 1/2 teaspoon salt 
  • 1/8 teaspoon Black pepper

  1. Preheat the oven to 350 F. 
  2. Put the red onion, garlic, ground beef, breadcrumbs, egg, parsley, mint, oregano, basil, olive oil, salt and pepper in a large mixing bowl and use your hands to mix well. Make sure the mixture is smooth and well combined. 
  3. Use a large cookie scoop to create a ball and work it into a ball using your hands. Place on a non-stick baking sheet or one that has been sprayed with non-stick spray. 
  4. Spray the meatballs with olive oil or use a small dish and a brush to brush them with olive oil. This helps them brown and crisp on the outside. Bake for about 20-25 minutes or until browned and the internal temperature reaches 165 degrees F. 
  5. Serve in a rice bowl, hummus bowl or on their own.
