ingredients

  • 2 strip steaks
  • 1 teaspoon olive oil
  • 16 oz baby Bella mushrooms
  • ¼ cup chopped shallots
  • 2 cloves minced garlic
  • ¼ cup dry white wine
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • Salt to taste
  • ¼ cup heavy cream
  • Parsley for garnish

cooking

  1. Heat olive oil cast-iron skillet to medium heat.
  2. Season the steak on both sides with salt and pepper.  Since the steak is served with a lusciously flavorful sauce, the beef itself doesn’t need much more than salt and pepper for seasoning.
  3. Place beef in the hot skillet and cook the beef to medium-rare (or to your desired degree of doneness). This will take 4-5 minutes on each side depending on the thickness of your steaks.
  4. When the steaks have finished cooking, remove the steaks and allow them to rest while you prepare the sauce.
  5. Place sliced mushrooms into the skillet along with chopped shallots. Cook until the vegetables soften, stir in garlic, and cook another minute.
  6. Add dry white wine to the mushrooms along with Dijon mustard and Worcestershire sauce.  Remove the pan from heat and whisk in heavy cream. Season the sauce with salt and pepper to taste.
  7. Slice the steak across the grain and serve it with the sauce. Top each dish with freshly chopped parsley.
