Cheeseburger pot pie is a simple, home cooked comfort food that will both please and nourish your family!

  • 1 teaspoon olive oil
  • ½ cup frozen corn, carrot and celery mix
  • 2 cloves minced garlic
  • 1 lb lean ground beef
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons ketchup
  • 2 teaspoons yellow mustard
  • 2 cups beef broth
  • ¾ cup chopped pickles
  • 1 cup shredded cheddar
  • 1 can jumbo biscuits
  • 1 teaspoon dried garlic
  • 1 teaspoon dried onion
  • 1/4 cup grated Parmesan cheese

  • 1. Preheat oven to 400 degrees. Grease a 9 x 13-inch baking dish and set aside.
  • 2. Heat the olive oil in a large skillet over medium heat. Add frozen vegetables and heat until they begin to soften. Stir in garlic; cook for 1 minute. Add ground beef to the pan and cook until crumbled and no longer pink. Season beef mixture with salt and pepper. Stir in Worcestershire sauce, ketchup and mustard.
  • 3. Add beef broth and bring beef to a boil. Allow mixture to cook on medium high heat until it begins to thicken. This should take about 10 minutes. Stir in pickles.
  • 4. Pour beef into the prepared baking dish. Sprinkle cheese over the beef.
  • 5.Quarter the biscuits and toss them with the dried onion, garlic and Parmesan cheese. Arrange biscuits over the cheese and beef mixture and bake for 15-20 minutes or until biscuits are golden.

I’m Tanya and I am the cook, baker, cocktail shaker and picture taker behind Lemons for Lulu. I am a self taught cook with an intense love of food. That love of food is the whole reason I started this blog back in 2012. I spent my days experimenting with food and recipes; I wanted to share my experiences just in case someone else could benefit from my trial and errors. Over time, my blog transformed into a space where people came to share their love of food.
